Purple Mashed Potatoes!

Is it ice cream? Some kind of berry compote? Does it contain Blue Dye #2? No to all of the above! It’s purple mashed potatoes!!!! Violet picked them out at the Farmer’s Market and Richard smashed them with butter and cream. But of course you can go vegan by using some of the water you boil them in, or vegetable broth. They REALLY dress up the palette and the palate! Kid-friendly! Violet ate this whole scoop.

    Cool! But how did they stay purple? I thought purple potatoes turned white when you cook them. But maybe I’m thinking of purple string beans that turn green when you cook them. That was always such a disappointment.

    I know! I thought they would be white on the inside – but they’re purple through and through. Very cool. We got red potatoes the other day and Violet was surprised that they weren’t red on the inside too. Ha.
