I just got home from a beautiful day at the park with a group of excellent friends and even though I was eating the whole time, I’m hungry! I was about to dig into some cheese and crackers when my conscience said, Make a salad, then you won’t need a nap. Damn conscience.
Thankfully, I went grocery shopping this morning, and there is actually some salad-y stuff in the kitchen. And because I can’t do anything without blogging about it (it’s a sickness; compulsive sharing), behold my lunch!
Chick Pea Cucumber Cilantro Salad
I can chick peas
A handful of cherry tomatoes, halved
1/4 of a medium red onion, finely diced
1 small cucumber, finely diced
A handful of cilantro, chopped
Combine olive oil, balsamic vinegar and a teaspoon of Agave syrup (or Maple syrup), salt & pepper
Toss and eat!
Then once you’re feeling sufficiently virtuous, pig out on cheese and crackers.
