When my mom and Violet and I planted a peach tree last September during mom’s visit, we weren’t expecting it to yield fruit the very next summer. But here we are in June, my mom is back for another visit, and lo and behold, she gets to taste the fruits of her labor, literally!
The peaches are juicy and sweet with a great, creamy texture. It’s a freakin’ miracle to have these growing in our yard. Seriously. Peaches, people! In the yard! Some of them are firmer than ideal, but that may be the price to pay for not finding an earwig in the center – and not having to wrestle a 4-year-old away from picking the tempting fruit.
Mom helped me come up with an idea for a quick salad after we’d made this harvest and Violet had eaten two in a row out of the bowl. It turned out to be a great combination! The sweetness of the peaches, the umami of the peas and the smooth creaminess of the avocados blend so well together. I think it might also be good with cilantro – but nothing too overpowering because the flavors are subtle. If anyone makes variations, please post in the comment section!
Peach Chick Pea Avocado Salad
2 ripe peaches, diced
2 ripe avocados, diced
1 small can of chick peas
For the dressing;
Juice from two oranges
1-2 tablespoons balsamic vinegar
Salt to taste
Here’s the little tree that worked so hard over the last several months. Way to go little tree! I will add that I plucked off dozens of immature peaches over the course of the last several weeks so that these ones could get to a reasonable size, and that strategy seems to have paid off.
